Not just a petrol station treat

While the mass production of the Scotch egg for local shops and petrol stations may have tarnished the image of this once elegant take-away product, making it from scratch at home will secure it a favorable place in your collection of recipes. The Scotch egg is credited by many in the culinary world to be the creation of grocers at the Fortnum & Mason goods store where it was referred to as the Birds’ Nest. On March 2, 1863 this famous store was appointed the official grocers to HRH the Prince of Wales.
This popular dish can be served hot at home with vegetables or salad or packed cold to be enjoyed at a picnic.
Scotch Eggs:
Ingredients:
6 soft boiled hard-cooked eggs, well chilled
1 pound breakfast sausage
1/2 cup flour
2 eggs, beaten
3/4 cup fine bread crumbs
Plastic wrap
Vegetable oil for frying

Method:
Peel eggs and set aside. Divide sausage into 6 portions.
Roll each egg in flour
Place plastic wrap on counter top press a portion of the sausage flat on plastic wrap then wrap plastic wrap and sausage around each egg – making sure to cover the egg completely.
Twist plastic wrap around egg and sausage to compact. Chill in the refrigerator for 20 minutes.
Remove plastic wrap and dip sausage-wrapped eggs into beaten eggs and roll in bread crumbs and repeat.
Heat vegetable oil to 350 degrees Fahrenheit.
Cook each egg in oil about 4-5 minutes or until sausage is cooked and browned. Drain on paper towel.
