Fishing season had a bad start to it. Rivers were too high. Anyone falling in around here would've end up in the Chesapeake Bay. 50's and 60's in the day and snow predicted for next week. Maple syrup is good. For a small back yard operation, I boiled down nearly 200 gallons of sap for abut 4 gallons of PURE maple syrup. T'aint nuttin" like the real thing.

Rather than to take several pages to explain the entire process, here is a website to start with. http://www.bcn.net/~thatcher/trees.htm

The tree is "tapped" for the sap by drilling a small hole in the tree about 1 - 1-1/2m off the ground. The sap contains a natural sugar, but is very dilute when it first comes out. It takes about 35 - 45 gal. of sap to make one gallon of syrup. The boiling takes the longest time. After the syrup is complete, it can be boiled at a higher temp to make cream sugar and hard maple candy.

I didn't know maple trees had nipples.
