Ingredients: 8 oz short pastry for upper and lower crusts Filling 2 large onions chopped fairly finely 4 oz grated tasty cheddar cheese (medium or old) 2 tablespoons milk and pepper Method: Divide pastry in two, roll out and line 8-inch plate with one half. Boil onions in a little water. When transparent, drain, reserving the liquid. Mix shredded cheese into warm onions. If mixture seems a little dry, add a little of the reserved stock. Put onion and cheese mixture into pastry base, then sprinkle over the milk and a dash of pepper. Cover with other round of pastry, press edges together and decorate if desired and brush with milk. Bake in hot oven 400F for approximately 30 minutes. Check after 25 minutes. Serve with bacon and peas for a rounded out meal. More... |
