Default Chow hall -- Ted G up!

We've been having some interesting culinary fun here on the ranch
and I wanted to share some dining ideas with Senor Ted.

Two years ago we bought some Louisiana-grown sweet potatoes for
Thanksgiving, and my beloved Filipina spouse believes (with a
great deal of accuracy) that despite the fact we are in the
middle of the Sonoran desert, she can grow most anything.

So she took one of said swet potatoes, set it in some water and
when it took root she planted it in the back yard.

This time last year we harvested several dozen very sweet, very
large tubers and expect to do a similar harvest next weekend.

Now, I told you that so that I can tell you this?

Did you ever eat Sweet Potatoe leaves?

Mrs. Spectre harvests the very tips of the new growth, cutting
off the last 4-5 inches and cutting off any leaves that are more
than about 1-1/2 inches at the widest. After washing/rinsing
three or four times she boils them like one would boil fresh
spinach leaves. Served with low sodium soy sauce and some fresh
lemon juice, they are exceptionally tasty.

Thought I was pass that one along.

Now there is a valuable missive.

I have never thought to cook the leaves of the sweet potato, but this opens
new horizons. Around these parts the most delectable way to serve the sweet
potato pulp is in the form of fried pies, or empanadas. They are a special
treat on Sunday mornings, indistinguishable from punkin.

Hah yew, Frank? Or Pancho, as we would say around hereabouts.

I still remember your missus' cooking, with great fondness.

But remember, not the mature leaves, just the immature tips and
very very small leave. The rest, Mrs. Spectre says, is pig food.

We are fine. I found that avoiding this newsgroup was better than
my meds for keeping my blood pressure under control. I see the
same old folks are just as combative as ever.

Mrs. Spectre was ever the greatest of chefs. She preserves the best, as in
her chicken adobo, and boldly goes where no one has gone before, as in this
latest. I had no idea that sweet potato greens were even edible.

Please give my good wishes to your spouse, Gunner, and tell her I am still
living on the memory of her cooking.
