Historically the stoves in Welsh homes were lit once a week for baking day, as the heat began to dwindle, a handful of currants were added to the last bit of remaining bread dough. Although a considered a treat Bara Brith is not cake rather it is bread and is still a popular dish produced in all over Wales. In the North of Wales the fruit is often soaked overnight in tea while the southern regions forgo the soaking process. Ingredients: 1lb mixed dried fruit ½ pint of tea 2 tbsp. of marmalade or honey 1 egg, beaten 6 tbsp. of soft brown sugar 1 tsp. mixed spice 1lb self-rising flour Directions: 1. Soak the mixed fruit overnight in the tea. 2. The next day, mix marmalade, egg, sugar and spice together. 3. Fold in the flour and dried fruits until just combined. 4. Pour the batter into a greased and lined loaf tin. 5. Bake in pre-heated oven at 325 degree oven for one and three quarter hours or until the centre is cooked through. 6. Check from time to time that the top doesn’t brown too much, cover with a sheet of foil if browning too fast. 7. Remove the bread from the tin and cool on a wire rack. 8.
